Ingredients:
♡ 1 cup of rolled oats
♡ 1 cup of oat flour
♡ 1/2 cup of dates
♡ 1/4 cup of water
♡ 1 tbsp of coconut oil
♡ 1 tsp of peanut butter
♡ 1/4 cup of ground almonds
♡ 2 tsp cinnamon
♡ 1 very ripe banana
♡ 1/4 cup of raw cane sugar/coconut sugar
1. Preheat the oven to 180 degrees Celsius
2. Put all the dry ingredients into a large bowl, blend the dates with the water into a blender (I used a Nutribullet) and then add the blended dates to the dry ingredients. Mash up the banana and add that as well.
3. Use a wooden spoon to mix up all the ingredients until you get a slightly wet cookie mixture.
4. Take small handfuls of the cookie batter and mold them into cookie sized circles. Place them on a baking tray lined with grease proof paper (so you don't have to use any oil/butter) and place the cookies on the tray. You can bunch up the cookies quite close together as they wont expand. Put them in the oven for 10 minutes2.
